Beaujolais what???

As you might know, every 3rd Thursday of November, we celebrate Beaujolais Nouveau all over the World. Over the years, the excitement have been fading away. People got tired paying high price for a juice that is often very not drinkable. In just a few days, the wine is bottled and shipped all over the World by plane on Wednesday in order to be consumed on Thursday. Have you ever heard of the effect of the bottle-shock??? It happens right after bottling, due to the sulfites added and all the shipping & handling process, the wine become unbalanced and kind of muted. After traveling, wine need to rest, no matter what!!!
